0 This yummy, creamy South Indian chutney is an impromptu from my mother’s kitchen. This recipe was handed down to me to make my sad pandemic quarantine healthier and interesting, and is my go-to when I’m tired and lazy to cook, and goes amazingly well with any Indian bread, Dosa, Idly or paniyaram. The Avarakkai Chutney (Tamil for Indian Broad Beans chutney) was created keeping in mind our daily essential needs of protein and is great to boost your immunity. Ingredients: ● Indian Broad beans – 100gms● Onions and Tomatoes – 2 small pieces each (optional)● Urad dhal – 2 tbsp● Salt to taste● Red chilli or chilli powder to taste● Garam masala to taste● Coriander and turmeric powder – 1 pinch each● Tamarind – half a lemon size● Curry leaves to temper● Mustard seeds – 1 tbsp How to make it? ● Roughly chop up the Indian Broad Beans, or Avarakkai (Onions and tomatoes is necessary) and saute in a pan with some salt, red chilli/chilli powder, garam masala, coriander powder, turmeric powder and tamarind till soft with some urad dhal.● Let it cool down before blending it in your mixer finely.● Temper it with some mustard seeds and curry leaves and serve with any Indian bread, Dosa, Idly or Paniyarams and enjoy your healthy deliciousness!

How to make the ultimately SOFTEST rotis at home in just 15 minutes !

0 All the roti lovers and home-trained chefs struggle in making soft rotis. What seems to be an impossible task, is actually quite easy and you just need a few tips to make it yourself! Do NOT knead while making your dough – While making your dough, do not knead, and add warm water and very little oil while creating the dough. This keeps the texture of the atta together and ensures that it doesn’t become hard and dries out. Rest, Rest, Rest! – Once you’re done making the dough, set it aside and cover it with a clean cloth for at least 2 minutes before kneading it. Knead for speed – Kneading technique matters in binding the dough and to keep the softness and moisture together. Knead with pressure applied from your wrists for a minimum of 1 minute before resting the dough under the cloth for 10 minutes. Roll the dough hard and tight – Make small balls and roll them hard and tight to conceal the softness one last time before cooking it. Do NOT ghee or oil your rotis – While making the roti, ensure that you don’t add ghee or oil to it and cook it on medium flame until the rotis are half done, and then gently cook it on direct fire until it’s well done on both sides. Dhokla Recipe – Food that satisfies your taste buds and health

0 Craving for something yummy, easy to make AND not break your diet plans? Then this Gujarati delight is your go-to snack! The soft, spongy and spicy Dhokla, is a steamed cake based on fermented rice/besan that contains numerous nutritional values. Dhoklas are known to be rich in protein, soothe your digestive tract, bring a balance in your blood pressure, all the while being diabetic friendly and helping in weight reduction. Ingredients 3/4 cup semolina 1/2 cup rice flour 1 tsp minced ginger 2 tsp minced green chilli 1 tsp black pepper powder 1/4 cup urad dal flour 1 cup curd 1/2 water 1 tsp eno Salt as per taste For tempering 2 tsp oil 1 tsp mustard seeds 3 green chilies Method of preparation: Mix Semolina, rice flour or besan and urad dhal flour in a bowl with curd, chillies, ginger, salt and water to make a thick batter. Add Eno to this batter and mix well. Grease a container with oil and pour in the batter and sprinkle some red chilli powder and black pepper powder on top of it and let it steam in for 15 mins. Test the Dhokla with a knife or a toothpick for an even bake. If not baked all the way through, let it steam for another couple minutes until completely baked. Once done, let the Dhokla rest and cut it into cubes. Temper the panned and cut Dhoklas with some heated oil, mustard, and chopped green chilies and enjoy!

Pan Cake Ingredients 1 cup Whole Wheat 1/8 teaspoon Salt 1/4 teaspoon Cinnamon Powder 1-1/2 tablespoon Natural Sugar 1 tablespoon Oil 1 tablespoon Water 1 cup Milk Butter Honey Mix wheat flour, salt, cinnamon powder, sugar, and oil. Gradually add water and milk to the dry mix, to get the batter. Make small pan cake on the hot pan and top it with honey, butter and fruit of your choice. Oatmeal Ingredients 1 cup Milk 1/4 cup Oats 6 Raisins 1 tablespoon Nuts Powder 1 teaspoon Honey 2 cups Water Bring water to boil and oats, milk, nuts powder and let it cook. Once, done garnish it with honey and raisins. Besan Chilla Ingredients 1/4 cup Besan 2 tablespoon Carrot, grated 2 tablespoon Onion 2 tablespoon Tomato 1/4 teaspoon Cumin Seeds 1/8 teaspoon Ajwain Water Salt, to taste Ghee Mix all the ingredients to make a chilla batter, pour the batter on the pan using stell moulds or and make shapes of animals and plate it. Sweet Vermicelli Ingredients 1 tablespoon Ghee 2 Cashew Nuts 3-4 Raisins 1/4 cup Vermicelli 1 cup Milk 1 tablespoon Natural Sugar 1 tablespoon Nuts Powder To the hot pan add ghee to roast the nuts and raisins. To the same pan add Vermicelli, nuts powder, milk and water to let the vermicelli cook. Finally, add sugar and top it with raisins and nuts. These simple recipes with interesting plating makes it appetizing for the kids, with any lack in the nutritious value.
