The Railway Mutton Curry is a melloweddown version of the famous Kolkata Mangsho Jhol (Kolkata Mutton Curry). It is believed that once a British soldier, while travelling first class, followed the delicious aroma that came from the train’s pantry.
Too spicy for his liking, the staff added coconut milk and water to tone down the spices. Famished and satiated the officer fell in love with this amazing dish. Finding it a little difficult to recall the name of the dish on his next visit the officer simply addressed the dish as the Railway Mutton Curry, and that’s how this dish came into existence.

This dish was first introduced and served in the first-class compartments of the Frontier Mail. Back then, run by the Western Railway, the Frontier Mail was considered one of the most elite and prestigious trains in India.
INGREDIENTS
- 80 ml oil
- 10 gm garam masala
- 4-5 onions, large, cut into fine long strips
- 1 knob ginger, finely chopped
- 4-5 garlic cloves, finely chopped
- ½ tsp turmeric powder
- ½ tsp coriander powder
- ½ tsp deggi mirch powder
- 2-3 potatoes, large, peeled and cut into medium pieces
- 500 gm mutton, cut into medium pieces
- 75 gm yoghurt
- 1-2 tomatoes, large, cut into medium pieces
- ½ tsp cumin powder
- ½ tsp Punjabi garam masala
- ½ tsp kasoori methi
- Salt as per taste
- Fresh coriander leaves, finely chopped, for garnish
- Heat some oil. Once done, add in the garam masala and the onions. Saute until the onions are golden brown.
- Now add ginger, garlic, turmeric, coriander and deggi mirch powder. Continue to saute for some more time.
- Here you can add a little water to the mixture. This will prevent the mixture from getting too dry.
- Once done, add the chopped potatoes to the mix. Give it a good stir.
- Add the mutton at this stage. Let it cook for roughly around 15 to 20 mins
- Once done, add in yoghurt and tomatoes. Continue to cook for another 10 to 15 mins or until the meat is done.
- At this final stage, add cumin powder, Punjabi garam masala and kasoori methi.
- Check for seasoning.
- Once the mutton is cooked, sprinkle chopped coriander leaves.
- The Railway Mutton Curry is now ready to be served.
