In love with Chipotle flavours but concerned about consuming packaged and processed food? Then this recipe will revamp your soul with the yumminess of Chipotle cheese and the goodness of a homemade wonder. What’s the catch you ask? This recipe can be prepared from scratch in under 15 mins and can be stored in an airtight container in your fridge for a week!
What you’ll need
● Milk – 1 litre
● Lime Juice – 2 to 3 tbsp
● Salt to taste
● Hung curd – 150 g
● Cheese cubes
● Kashmiri Red Chillies or Chipotle chillies – 3
● Chopped Olives – 2 to 3 tbsp
● Chopped Jalapenos – 2 to 3 tbsp
● Chopped Sun Dried Tomatoes – 2 to 3 tbsp
● Oregano – 1/2 tsp
● Chopped coriander – 1 tbsp
● Garlic – 2 cloves
● Black pepper to taste
How to make it?
● Boil your milk well and add the lemon extract while still warm and drain out the water.
● Rinse and gently press out any excess water and make sure to not press too tightly to keep the texture intact.
● In the meantime, soak the chillies in warm water for about 2 mins.
● Transfer from the cheesecloth to a mixer or blender with the hung curd, soaked chillies, pepper, salt, cheese cubes, and blend until a smooth paste.
● Add the chopped olives, jalapenos, sun dried tomatoes, oregano, chopped coriander leaves and mix well.
● Transfer to an airtight container and store in your fridge for about a week.
