Who says you can’t have your ice cream and eat it too? If you’re on a quest for guilt-free indulgence, homemade sugar-free ice creams are the answer. Not only do they satisfy your sweet cravings, but they also let you relish every spoonful without the worry of excess sugar. Let’s dive into these delightful recipes that promise to redefine your ice cream experience. 

CREAMY VANILLA BLISS

PREP 15 min SERVES 2

INGREDIENTS

2 cups heavy cream   

1 cup unsweetened almond milk

½ cup erythritol or stevia (for sweetness) 

1 tbsp vanilla extract  

Method: 

  1. In a mixing bowl, combine heavy cream and almond milk. 
  2. Add erythritol or stevia and whisk until the sweetener is fully dissolved.
  3. Stir in the vanilla extract for that classic vanilla flavour.
  4. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  5. Transfer the churned ice cream into a container and freeze until it reaches your desired consistency.

BERRYLICIOUS DELIGHT 

INGREDIENTS

2 cups mixed berries (strawberries, blueberries, raspberries)

1 cup coconut milk

1/4 cup monk fruit sweetener

1 tablespoon lemon juice

Method: 

  1. Blend the mixed berries, coconut milk, monk fruit sweetener, and lemon juice until smooth. 
  2. Strain the mixture to remove seeds for a smoother texture.  
  3. Pour the berry mixture into an ice cream maker and churn until it thickens.
  4. Transfer the churned ice cream to a container and freeze until it’s scoopable. 

ENERGISING COFFEE KICK 

INGREDIENTS

2 cups unsweetened coconut milk

1 cup brewed and cooled black coffee

1/2 cup monk fruit sweetener

1 tsp pure vanilla extract

Method: 

  1. Combine the coconut milk, brewed coffee, monk fruit sweetener, and vanilla extract in a blender. Blend until smooth. 
  2. Pour the mixture into an ice cream maker and churn as per the manufacturer’s guidelines. 
  3. Transfer the churned coffee-infused ice cream to a container and freeze until it reaches the desired consistency.
  4. Say hello to a caffeinated delight with this homemade sugar-free coffee ice cream!
