This healthy salad brings together all the necessary protein and fiber as the beans, chana and peanuts are boiled and cooked helping in digestion and giving a good taste. Ingredients like sweet corn and all the veggies make it more colorful and filling without adding calories to your bowl.
Ingredients
For salad
- ½ cup of boiled kidney bean
- ½ cup of boiled black chana
- ½ cup of boiled corn
- ¼ cup of boiled peanuts
- ¼ cup of cabbage ¼ cup of carrots
- ¼ cup of capsicum
- ¼ cup of onions
- ¼ cup of tomatoes
- ¼ cup of raw mangoes
- 1 tbs of roasted pumpkin seeds
- Chopped coriander
For dressing
- 4 tbs of lemon juice
- 2 garlic minced
- ½ cup of Greek yogurt
- Minced basil
- Lemon rind
- Crushed pepper
- Salt
Method
- Wash and soak kidney beans, chana, and peanuts overnight.
- Pressure cook it for 4 – 5 whistles and set aside for pressure to release.
- Boil corn in water for 5 minutes and let it cool.
- Saute the veggies for a minute and add all the boiled chana and beans together.
- Combine all the dressing ingredients together and give it a good mix.
- Mix the dressing and salad together and garnish it with roasted pumpkin seeds and chopped coriander and serve.
